The traditional recipe for tortilla de patatas or Spanish omelet, a basic dish of Spanish cuisine based on potatoes, eggs, and onions.
3 potatoes (600 gr)
1 small onion
1 green pepper
2 glasses of olive oil
salt and parsley
Peel and chop the onion into medium cubes. Clean the green pepper, remove the stem and seeds, and dice.
Peel potatoes and cut them in half lengthwise and then cut each piece into 1/2 cm thin crescents.
Put everything in the pan, season to taste, and fry over low heat for 25-30 minutes.
Remove the frying pan and drain. Transfer the oil to a bowl and set aside. Clean the pan with paper towels.
Crack the eggs into a large bowl and beat them. Salt them as you like, add the fried potatoes, onion, and pepper and mix well.
Put the pan back on the heat, add a dash of the reserved oil, and add the mixture. Stir a little and wait (20 seconds) for it to start cooking.
Separate the edges, cover the frying pan with a plate of larger diameter than the frying pan and turn it over.
Put it back in the frying pan so that it cooks on the other side.
